Shaved Fennel & Apple Salad with Toasted Walnuts, Manchego Cheese, & Sherry Vinaigrette

Ingredients

Salad
  • 2 fennel bulbs (locally sourced when in season), thinly shaved
  • 2 Granny Smith apples, thinly shaved
  • 1 cup toasted walnuts
  • 1 cup shaved manchego cheese
  • 1 cup thinly sliced red onion
vinaigrette
  • 3 tablespoons sherry vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons water
  • 1 tablespoon walnut oil (may substitute olive oil)
  • salt, as needed
  • fresh ground black pepper, to garnish

Instructions

In a small bowl, whisk together vinaigrette ingredients.

Mix all salad ingredients and vinaigrette together and serve.

Garnish with fresh ground pepper.
