Ingredients
Salad
- 2 fennel bulbs (locally sourced when in season), thinly shaved
- 2 Granny Smith apples, thinly shaved
- 1 cup toasted walnuts
- 1 cup shaved manchego cheese
- 1 cup thinly sliced red onion
vinaigrette
- 3 tablespoons sherry vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 2 tablespoons water
- 1 tablespoon walnut oil (may substitute olive oil)
- salt, as needed
- fresh ground black pepper, to garnish
Instructions
In a small bowl, whisk together vinaigrette ingredients.
Mix all salad ingredients and vinaigrette together and serve.
Garnish with fresh ground pepper.
